Tun-du-ree owes its name to the ancient Indian oven called the ‘Tandoor’. It is basically a clay oven heated to over 900 degrees Fahrenheit by use of resinous wood and twigs of aromatic herbs to impart subtle flavors to the food. The oldest example of a tandoor was found in the ancient Indus Valley Civilization dating back to 3300 BC. The latest version of this age old implement is interestingly run by gas, retaining the taste and flavor of a bygone era using aromatic spices and marinade recipes passed down generations.
